Sesame sauce Liangpi, Qinzhen Liangpi, Hanzhong rice skin, gluten Liangpi, etc. With the civilization of "white, thin, light, soft, gluten, and fragrant", there are many Liangpi stalls in the streets and alleys, which can be regarded as the staple food of Shaanxi all the year round. I have previously introduced the sesame paste lazy Liangpi in Shaanxi. This time, I made Liangpi for washing face in Shaanxi. The gluten Liangpi is also unique.

Steps to make [Shaanxi Genuine Liangpi Wash]

  • 1.1. Add water to the flour, slowly knead well, and knead into a dough. Cover with cling film or a damp cloth and wake up for a few hours.
  • 2.2. Add enough water to the bowl and slowly knead the dough in the water.
  • 3.3. Slowly turn white with clean water, continue kneading and washing your face.
  • 4.4. After washing for about 20 minutes, the color of the dough will become whiter and the gluten will be washed out.
  • 5.5. Take out the washed gluten, put it in a bowl, and steam it in a pot for half an hour.
  • 6.6. Let the washed Liangpi batter stand for more than 2 hours. At this time, the Liangpi batter is separated into two layers, the upper layer is clear water, the lower layer is clear water, and the upper layer is clear water.
  • 7.7 Brush a thin layer of oil on the Liangpi gong.
  • 8.8. Spoon a spoonful of batter into the Liangpi Gong.
  • 9.9 Slowly spread the batter evenly in the Liangpi gong.
  • 10.10. Boil a pot of water in advance, put the Liangpi gong into the hot water and start steaming the Liangpi.
  • 11.11. Cover the pot with a lid and heat it over high heat for about 2 minutes. If there are large bubbles on the surface, cover it and let it sit for another half to one minute.
  • 12.12. Prepare a basin of cold water in advance, and put the steamed Liangpi gong into the cold water to cool. In this way, repeatedly steam a lot of Liangpi on the grate.
