Technique
Steps to make braised Shanxi pasta
- 1. Prepare the ingredients, soak the yellow fungus vermicelli in cold water until soft
- 2. Mix flour with water to form a dough that is moderately soft and hard, cover it and let it sit
- 3. Wash the ingredients thoroughly, diced potatoes, carrots, tofu, mushrooms, celery, and chopped chives. Prepare chopped scallions and ginger, and cut yellow flowers and fungus into small pieces
- 4. Put the soaked soybeans into a pot of boiling water and cook them thoroughly
- 5. Roll the dough into a cake
- 6. Fold it and cut it into strips
- 7. Sprinkle some flour
- 8. Take a piece of noodles with your left hand, grab a peanut sized noodle with your right hand and rub it into a hollow shape with your thumb (as shown in the picture)
- 9. Rub all the dough and sprinkle some flour to prevent the food from sticking together
- 10. Heat up the wok and add oil. Add scallions and ginger and stir fry until fragrant. Pour in chopped potatoes, carrots, and celery cubes
- 11. Add yellow flowers and plants, ear salt, soy sauce, and thirteen spice stir fry for a few minutes (over medium heat), then pour in pork rib soup
- 12. Add vermicelli and soybeans
- 13. Add tofu
- 14. When the stewed dishes are ripe, turn off the heat
- 15. Bring water to a boil in a pot, add sesame food and cook until cooked. Then add the stir fried stewed vegetables and cook slightly to season
- 16. Serve with chives, and adjust chili oil and vinegar as needed when consuming
