Taiwanese style braised pork

Steps to make Taiwanese style braised pork

  • 1. Cut the pork belly into square strips with a side length of about 1 cm.
  • 2. Remove the winter mushrooms and shrimp soaked overnight, soak in water and leave for later use.
  • 3. Cut the shrimp into small pieces and shred the winter mushrooms.
  • 4. Prepare about 1 tablespoon of chopped ginger, chopped garlic and scallions into small pieces of octagonal cloves, and 2 pieces of dried tangerine peel.
  • 5. Bring to a boil over medium to high heat, and pour in the pork belly.
  • 6. Stir fry the oil, then take out the meat and lard separately, and leave the bottom oil in the pan.
  • 7. First pour in chopped scallions and ginger, stir fry for a moment, then add garlic and stir fry until fragrant.
  • 8. Pour in shrimp and winter mushrooms, stir a few times.
  • 9. Add tangerine peel and star anise, and stir fry until fragrant with the ingredients in the pot.
  • 10. Add the stir fried pork belly.
  • 11. Add water soaked in mushrooms and shrimp, and if not enough, add water or broth. In any case, the water surface should be level with the ingredients.
  • 12. Add 2 tablespoons of soy sauce paste, 1 tablespoon of oyster sauce, 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, 10g of rock sugar, 1 tablespoon of brown sugar, 2 tablespoons of rice wine, and scallion pastry.
  • 13. Flip for a moment, cover the lid, and simmer on low heat for about 30 minutes.
  • 14. Open the lid and try to remove the tangerine peel and star anise as much as possible. If the taste is not salty enough, add some light soy sauce. If the taste is bland, add an appropriate amount of rock sugar.
  • 15. Put the boiled egg in shelled water and simmer over low heat for about 20 minutes. Turn off the heat, cover the lid, and let it sit for about 30 minutes to let the egg soak and taste.
  • 16. After the time is up, you can enjoy it. Mixed rice and mixed noodles are both top-notch. Enjoy !
