Spanish Seafood Rice
My first time learning to make Spanish seafood rice at home, I bought most of the ingredients online, but they are still not complete! There must be more seafood in the food! This way it tastes satisfying! The most important part of this dish is saffron, which has a unique aroma that can dye rice golden and beautiful. Although expensive, it is indispensable!

Steps to make Spanish Seafood Rice

  • 1. Cut garlic cloves, colored peppers, and onions into small pieces and set aside for later use
  • 2. Prepared squid strips, diced chicken legs, fish fillets, prawns, and mussels
  • 3. Prepared Spanish spicy sausage and saffron
  • 4. Add an appropriate amount of olive oil to the pot, add diced onions and minced garlic, and stir fry until fragrant
  • 5. Add diced colored peppers and stir fry for a moment
  • 6. Add rice, I used Wuchang rice, preferably unwashed Spanish seafood rice
  • 7. Add a little saffron and chili powder
  • 8. Add white wine
  • 9. Add broth over rice, season with salt and black pepper
  • 10. Cover and simmer over low heat for 15 minutes, avoiding opening the lid in the middle
  • 11. Drain the soup
  • 12. Add seafood, sausages, and other ingredients, press lightly with a spatula, cover and simmer for 8 minutes.
  • 13. Add lemon and parsley leaves for decoration. Since I didn't buy parsley, I used our local celery leaves. When eating, mix the rice well and drizzle with lemon juice
