Steps to make Taro balls
- 1. Steaming taro in a pot, I didn't buy Lipu taro, so I used the most common taro on the market, and I felt that the taro balls I made were very good.
- 2. Peel the steamed taro and put it in a basin (weigh it).
- 3. Use a fork or spoon to press the cooked taro into a paste. When it's no longer too hot, slowly add sweet potato starch and grab the powder into the taro paste while adding. The amount of sweet potato starch is 35% -50% of that of taro, which means that if the peeled taro after steaming is 100 grams, about 35-50 grams of sweet potato starch should be added. This ratio allows the taro balls to retain the flavor of taro while also being chewy without being too chewy. If the taro is too dry, add a small amount of warm water.
- 4. Add flour little by little, knead it in little by little, and finally knead it into a non stick dough.
- 5. Roll into thin strips, cut into small pieces, and the taro balls are ready.
- 6. Cut the pumpkin into pieces and steam it in the steamer.
- 7. Chopsticks can easily pierce through with a gentle poke, indicating maturity.
- 8. Steamed pumpkins are very soft and can be easily scraped off the skin with a spoon.
- 9. Use a wok to stir fry the pumpkin puree until dry.
- 10. Because steamed pumpkin has a lot of moisture and a damp texture, adding a lot of flour directly would require a lot of flour to knead it to a non stick state. If too much flour is added, the resulting balls will be too chewy. Therefore, it is necessary to first stir fry the water and then mix with flour to knead it into a non stick dough.
- 11. Knead into a dough that can be kneaded without sticking to the hands, knead into thin strips, and cut into pieces. Pumpkin balls are also ready.
- 12. Bring water to a boil in a pot and add taro balls. Use a spatula to push the taro balls away so that they do not stick together. When the water boils again and the taro balls float up, boil for 1-2 minutes.
- 13. Take it out and cool it down with cold water.
- 14. Pour it into a bowl and mix it directly with sugar water to eat. I added Shaoxiancao jelly, red bean soup, and finally poured some condensed milk.
