Technique
Steps to make Braised pork
- 1. Dice pork belly.
- 2. Cut the onion into small pieces.
- 3. Soak dried shiitake mushrooms in warm water.
- 4. Cut it into small pieces.
- 5. Flatten garlic, slice ginger, cut scallions into sections, and prepare spices.
- 6. Heat a red oil pan and fry the chopped onions over low heat until golden brown. Drain the oil and set aside.
- 7. Use base oil to fry the pork belly until it changes color.
- 8. Add diced shiitake mushrooms and stir fry until fragrant.
- 9. Add diced onions and stir fry evenly.
- 10. Transfer to a boiling pot and add shelled boiled eggs, ginger and onion spices, and rock sugar.
- 11. Pour in clean water without any ingredients and simmer for 40 minutes over low heat.
- 12. Collect the juice over high heat (no need to dry it, the leftover juice mixed with rice is amazing).
