- 3. Place the sliced eggplant in a microwave container and simmer on high heat for 7-8 minutes until the eggplant becomes soft and almost cooked.

- 5. Heat a non stick pan and add an appropriate amount of salad oil,
- 6. Heat the oil and add Douban sauce and garlic foam. Stir fry over low heat until fragrant, and the red oil in Douban sauce will precipitate.
- 7. Add minced meat and stir fry evenly until the meat changes color and is basically cooked.
- 8. Add eggplant and stir fry evenly.
- 9. Add an appropriate amount of soy sauce and stir fry, then season with salt and sugar.
- 10. Add water starch and stir fry until the soup is viscous. Before turning off the heat, add chopped scallions.
