Steps to make Puxian specialty snack - Oyster Fry
- 1. Preparation materials: 200 grams of oysters, a small handful of chives, one egg, an appropriate amount of sweet potato flour (preferably sweet potato flour, I haven't used any other starch before, I don't know if it tastes good), 100 grams of oil
- 2. Place the oysters on a slightly larger plate in the morning, pinch them with a little salt, add water, and gently flick them a few times with your hands to remove them (some picked oysters may still have broken shells, adding salt can make them easier to peel off, so don't wash the oysters too much, just rinse them with water and filter out the broken shells). Cut the chives into small pieces
- 3. Mix the chives, sweet potato flour, oysters, eggs, and salt in a large bowl, stir well with chopsticks, and make a thin paste
- 4. Put a little oil in the pot, shake the pot gently, and let the oil spread evenly on the bottom of the pot
