Grid Double Fruit Pie
I originally planned to make a simple apple pie, but when preparing the filling, I shaved two apples and turned my head. When I saw that there were still pears, I added some as well. Moreover, this one was particularly sweet, so this double fruit pie was born~

Steps to make Grid Double Fruit Pie

  • Peel the apples and pears, cut them into small cubes, and put them in a bowl.
  • 2. Put 5g of butter into the pot first and let it melt over low heat.
  • When the color of the butter is slightly brown, add diced fruit.
  • After the fruit pulp is ripe, add 10g of white sugar. Slowly cook the fruit pulp over medium heat, and the diced fruit pulp will release moisture.
  • 5. After the moisture gradually decreases, add 2g of salt and squeeze in a small amount of lemon juice.
  • 6. Finally, collect the dried juice.
  • 7. Sprinkle a small amount of breadcrumbs, stir well, and the filling is ready. (Adding breadcrumbs is to absorb the remaining moisture in the fruit pulp.)
  • 8. Next, make the pie skin: low powder, the remaining 2g of salt, and 10g of sugar are sieved.
  • 9. Cut the remaining 10g of butter into small cubes and put them in.
  • 10. Rub it into coarse corn granules by hand.
  • 11. Add water and knead into dough.
  • 12. Put it in the refrigerator and let it cool for about 1 hour.
  • 13. Take out the loose dough and roll it into dough pieces.
  • 14. Place the dough into the mold, and use a rolling pin to press off any excess around it.
  • 15. Use a fork to fork some small eyes at the bottom.
  • 16. Put in the filling.
  • 17. Continue rolling out the remaining dough.
  • 18. Cut into noodle like strips.
  • 19. Arrange the pies in vertical bars.
  • 20. Every other piece of pie, flip it down from above and place the first piece of pie horizontally at the top.
  • After placing the horizontal leather, put back the vertical leather that has been flipped over.
  • 22. Then flip up the vertical bar that was pressed down by the horizontal bar.
  • 23. Place the second horizontal bar.
  • 24. Put it down and put it up.
  • 25. Similarly, prepare the grid and remove any excess parts. (The grid I summarized is like flipping up the vertical bars pressed by the horizontal bars and placing another horizontal bar. Can you understand it?)
  • 26. Apply a layer of whole egg mixture.
  • 27. Preheat the oven by turning the heat up and down to 200 degrees Celsius for 10 minutes. Then turn the heat up and down 180 degrees for 20 minutes.
