Steps to make Potato cleaning

1. Use a brush to rub the potato into long strips, rinse with clean water, and keep it dry for later use.
2. Sprinkle dry flour evenly on potato strips and mix well with chopsticks.
3. Apply oil on the steamer grate to prevent sticking to the pot.
4. Spread the potato strips evenly coated with flour onto the grate.
5. After boiling over high heat, steam for fifteen minutes.
6. Use a shovel to remove it and spread it flat on the cover mat to cool down.
7. Shred carrots for later use.
8. Cut the green pepper into thin strips and set aside for later use.
9. Cut scallions into horseshoe slices, prepare dry red chili peppers and Sichuan peppercorns.
10. Add bottom oil to a wok and heat it up to 70%. Add Sichuan peppercorns and scallions and stir fry until fragrant. Add carrots, cooking wine, soy sauce, rice vinegar, salt, and a little water to bring to a boil. Add shredded green peppers.
11. Add potato strips and stir fry quickly over high heat for one minute.
