Steps to make Sugar doesn't shake

  • 1. Prepare glutinous rice flour.
  • 2. Mix the glutinous rice flour with water to form a dough.
  • 3. Twist into small rice dumpling.
  • 4. Before rubbing the small rice dumpling, boil a pot of water. After the water boils, put the small rice dumpling into the pot and stir it to prevent sticking and bottom sticking.
  • 5. Cook until all rice dumpling come up and become larger. Retrieve supercooled water.
  • 6. Take another pot and add half a bowl of water, then add some sugar and cook until melted.
  • 7. Boil until all the sugar has melted and it forms a large bubble.
  • 8. Pour rice dumpling with cold water.
  • 9. Cook over medium heat and keep stirring during the process.
  • 10. Drain the water.
  • 11. Pour in the egg mixture.
  • 12. Quickly stir until the eggs are fully cooked, otherwise there will be a gamey smell. If you don't like eggs, you can also skip this step.
  • 13. Rise up.
