Ice and fire pineapple buns are a famous baked goods in Taiwan. At present, this type of food can only be purchased in Taiwan. Pineapple peels are made with sugar, which has a crisper texture. Brushed with egg yolk liquid, the color is also more beautiful. Various fillings are added inside, such as chocolate filling, red bean filling, etc. The pineapple skin is not engraved with patterns, and the finished product presents a natural cracking shape, which is very delicious.

Steps to make Ice and Fire Pineapple Bun

  • 1. Put 210 grams of high gluten flour, 60 grams of low gluten flour, 20 grams of whole egg mixture, 150 grams of milk, 25 grams of granulated sugar, 3 grams of salt, and 3 grams of yeast powder into a bowl and knead by hand. You can also use a bread machine.
  • 2. Add 25 grams of butter and continue kneading until it reaches the expansion stage. You can also use a bread machine, but I knead it faster for 20 minutes to finish.
  • 3. After kneading the dough, cover it with a fresh-keeping bag and let it rise to twice its size at once.
  • 4. When making pineapple peels, pay attention to softening 50 grams of butter, adding 60 grams of granulated sugar, and then stirring evenly. After dividing, add 20 grams of egg mixture and mix well. Finally, sieve in 80 grams of low flour and mix well with a scraper. If it is very sticky after mixing, it can be refrigerated for a while and then reshaped.
  • 5. Divide the pineapple peel into 25g portions, which can be divided into 8 portions. The remaining 20 grams are sufficient.
  • 6. After the dough has risen, divide the air into 55 grams each, which can be divided into 8 pieces and the remaining small one. Roll it round and let it air out, then let it relax for about 10 minutes.
  • 7. Flatten the pineapple peel.
  • 8. Put our bread balls filled with chocolate sauce on top.
  • 9. Slowly push the bread crust upwards while rotating the dough, wrapping about three-quarters of the dough.
  • 10. Put a bowl of boiling water in the oven and let it rise twice as large, about 40 minutes.
  • 11. Brush with egg yolk mixture.
  • 12. Preheat the oven to 165 degrees Celsius and bake for 15-20 minutes. It should be noted that setting the oven temperature to 165 degrees Celsius is relatively low in practice, and the color may be lighter. Using the oven a few more times will improve the oven's temperament, so don't be impatient.
  • 13. Prepare our New Zealand cream, which is currently unavailable in mainland China and only available in Taiwan. However, we can find a similar substitute.
  • 14. When the time is up, you can take out the Star Power Ice and Fire Pineapple Bun. When it first comes out of the oven, it's around 75 degrees. Measure it with a thermometer, and when it reaches 55 degrees, cut the ice and fire Pineapple Bun in the middle, cut a piece of our New Zealand cream, and put it in. Our ice and fire pineapple buns are ready.
