Steps to make Macaron ice cream sandwich

  • 1. Sift almond powder and sugar powder~It is best to sieve 2-3 times, so that the macaron surface will be smoother
  • 2. Next, separate the egg white and yolk. Today we only use egg white, so seal the yolk and put it in the refrigerator for refrigeration or freezing storage to start whipping the egg white. For sugar, we need to pour it into the egg white in three parts, stir for 1 minute each time, and then continue to pour in the remaining sugar. Finally, when the egg white is almost beaten, add a little food coloring and continue whipping until it is hard and foamy like this
  • 3. Start mixing the sifted powder and egg whites evenly. First, add one-third of the egg whites into the powder and mix evenly. Then pour in the remaining egg whites and gently stir until they are evenly mixed. This can reduce defoaming during the mixing process with almond powder
  • 4. Put all the remaining egg whites in and gently stir from bottom to top
  • 5. The macaron batter is ready, put it in a piping bag, and then squeeze it vertically with the baking tray into a small round shape. If you have a macaron special pad, you can squeeze it directly into it. At this time, be careful not to squeeze it too full, it should be about 4/5 full~~
  • 6. Shake the tabletop twice and let it dry for 15 minutes. At this point, preheat the oven to 150 degrees. Place the dried macaron in the middle of the oven and bake for 13-15 minutes
  • 7. Prepare some ice cream, a small bowl of hot water, and a small circular mold. For ice cream, Juju has prepared homemade vanilla, chocolate, and green tea flavored ice cream today. You can use purchased ice cream or homemade ice cream like me. First, put the mold into the hot water and quickly insert it into the ice cream. This way, you can cut the small circular ice cream. If there is no circular mold, you can use a small cup to print a circle on it first, and then use a spoon or knife to cut it out
  • 8. Finally, place the ice cream on top of the macaron cookies and cover it with another cookie to pull it!
