Egg yolk cookies
The yolk cookies we shared today are mainly made from egg yolks. To present a crispy and flaky texture, they still need to be whipped. Adding a small amount of baking powder can make the cookie batter more fluffy and crispy. I used one whole egg and two egg yolks to make a large bag of yolk cookies. The cost is so low that it's hard to imagine. The only drawback of this recipe is the remaining two egg whites. Don't worry, I will soon come up with a recipe for egg whites, which can be made using only egg whites. This way, three eggs can be perfectly utilized to make two bags of small snacks with different flavors and styles.

Steps to make Egg yolk cookies

  • 1.1. Prepare the ingredients, mix baking powder and low gluten flour together, prepare eggs and granulated sugar.
  • 2.2. Pour one whole egg and two egg yolks into a basin, ensuring that the basin is dry and free of water and oil. The remaining egg whites should also be poured into a drying container. I will share the method of stabilizing protein sugar later. Consuming these two egg whites will not cause waste.
  • 3.3. Mix low gluten flour and baking powder evenly, sieve them into a bowl for later use, and ensure that all utensils used are dry.
  • 4.4. Turn on the electric egg beater to beat the eggs at high speed. Add granulated sugar in 3 portions until the final beat is thick. Lift the beater and draw an 8-shaped pattern, which is not easy to disappear and can be held for more than 5 seconds.
  • 5.5. Pour the mixture of flour and baking powder into the beaten eggs and quickly and efficiently mix them evenly. If the mixing technique is not proficient, you can find some video tutorials to learn, which are easy to find.
  • 6.6. The cookie paste that has been thoroughly mixed should be smooth and free of dry powder. Do not stir excessively to remove foam, as it may affect the taste.
  • 7.7. Put the prepared batter into a piping bag and cut a small opening at the end.
  • 8.8. Pre lay oil paper on the baking tray, vertically squeeze out cookie paste from the piping bag, and make small round cakes with a diameter of about 1 centimeter. My baking tray is relatively large, it is the baking tray of an 80 liter Baicui K85 Pro flat air stove integrated oven. I also squeezed a plate and a half, and made a lot of cookies.
  • 9.9. The air oven can bake in multiple layers. Choose the air oven mode and preheat at 150 degrees Celsius for about 15 minutes. Once the surface color is satisfactory, it can be baked out of the oven (for a regular household oven, it should be baked at 170 degrees Celsius for about 15 minutes, in the middle layer, and after observing the color, it can be baked out of the oven).
  • 10.10. Remove the oil paper from the oven and place it on the rack to cool. Use a scraper to easily remove the cookies.
  • 11.11. There are air holes in the middle, which make it crispy and full of egg aroma. If you can't finish eating it, be sure to seal it well to avoid moisture and softening.
