Hakka people have the custom of eating Qingming rice cakes on Qingming Festival. In eastern Guangdong, where humidity is high, eating Qingming rice cakes can have the effects of dehumidification, dispelling dampness, warming the stomach, and preventing various diseases.

Steps to make Qingming Ai Ban

  • Only two types of green leaves were used, mugwort leaves and cockscomb vine.
  • 2. Boil a pot of water, blanch the green grass in water, add 1 gram of alkali flour, do not pour the water used to blanch the green leaves, keep it for later use.
  • 3. After blanching, remove the green leaves and rinse with cold water.

  • 6. Pour in 200 grams of sugar and stir evenly.

  • 8. Pour two types of powder into a bowl.
  • 9. Pour the green grass juice into the powder.
  • 10. Join a group.
  • 11. Take about 60 grams of dough, knead it into a circle, and press it into a cake shape.
  • 12. Steam in the pot. I specially went to the banana plantation to cut some banana leaves at the bottom, which is environmentally friendly and healthy, and can also add fragrance.
  • Steam on high heat for 20 minutes until it's ready to serve.
  • 14. Soft and glutinous, with a moderate sweetness, it brings spring into your mouth in one bite.
