Steps to make Braised Noodles with Lamb

  • 1. Mix 200 grams of flour with 105 grams of water and 2 grams of salt to form a smooth dough. In winter, add a little more water. In spring and autumn, it can be done at a ratio of 2:1, while in summer, it is necessary to add 200 grams of flour to 98 grams of water. This way, the resulting noodles will be easier to open and have better texture.
  • Divide the dosage into about 75 grams, knead well, and seal it with a plastic bag to avoid drying the skin. Let it sit for about 30 minutes.
  • 3. Roll the prepared dough into long pieces and use chopsticks to press a mark in the middle, so that it can be easily split in half when cooking.
  • 4. Brush oil on the surface of the rolled out dough, place it on a plate, and still seal it with a cling bag for about 2 hours. The surface is very important, and it can only be easily opened after passing through the surface.
