Wisteria flower stir fried eggs

1. Pick fresh wisteria flowers.

2. Remove the flower stem.

3. Wash the flower buds and petals.

4. Drain the water.

5. Put water into the pot and bring to a boil. Blanch the wisteria flowers in water for half a minute, then remove and cool to remove excess water.

6. Cut the scallions finely.

7. Beat eggs with salt and cooking wine.

8. Put the wisteria flowers in blanched water.

9. Add chopped scallions and mix well.

10. Heat up the oil in the pot, then pour in the wisteria flower egg mixture and stir fry.

11. Stir fry into chunks.
