Steps to make Yunnan Bandit Pig Liver

  • When the pig liver was bought from the market, it was already sliced and soaked in warm water at home to wash off the blood. After rinsing, the blood was basically removed.
  • 2. Cut the scallions into sections, dice garlic and ginger into about 1cm cubes, and break the dried chili peppers into two ends.
  • 3. After removing the blood and water from the pig liver, drain the water. Pour in 10ml cooking wine, starch, and soy sauce and marinate for 20 minutes.
  • 4. Heat the pot to 8 minutes and pour in oil to heat it up.
  • 5. Add diced garlic, ginger, and dried chili until fragrant.
  • 6. After the dried chili peppers change color, add soy sauce and stir fry until fragrant.
  • 7. Slide the pig liver into the pot and stir fry for about 1 minute until the liver changes color. Add scallions and stir fry for another minute. Add salt and MSG to season.
