Steps to make Fuzhou Meat Swallow
- 1. Prepare materials.
- 2. Add a small amount of oil to a wok and heat it up until fragrant Sichuan peppercorns are cooked. Check out the Sichuan peppercorns oil and set it aside.
- 3. Clean and peel the water chestnuts for later use.
- 4. Flatten the water chestnuts with a kitchen knife and chop them into small pieces. Never chop it into mud.
- 5. Cool the Sichuan pepper oil and add it to the pork filling.
- 6. Add scallions, five spice powder, cooking wine, dark soy sauce, chicken essence, and chopped water chestnuts to the meat filling and stir well.
- 7. Prepare fresh Yanpi.
- 8. Cut the fresh Yanpi into squares for use.
- 9. Prepare a piece of Yanpi and put some meat stuffing into it.
- 10. Wrap it like Wonton.
- 11. Wrap the meat swallows in sequence.
- 12. Add water to the steamer and steam for about 15 minutes. You can take out the meat swallow when it's 80% cooked. Steam the meat swallows and let them cool, then place them in the refrigerator for immediate consumption.
- 13. Add water to a boiling pot, and when the water boils, add the meat swallow and cook over high heat.
- 14. Chop the scallions into small pieces and set aside for later use.
- 15. Take a bowl and add shrimp oil, fish sauce, sesame oil, scallions, and pepper to the broth. Transfer the meat swallows to the bowl and serve.
