These dried noodles were sent to me by my mom on Mid Autumn Festival. They are a whole big box and I really like to eat dried noodles from my hometown. I can't even see them here in Shanghai. Steps to make Wenzhou fried noodles
- This is dried noodles from my hometown. (You can also switch to other types of noodles)
- 2. Wash the shiitake mushrooms and carrots and cut them into thin strips for later use.
- 3. Cut the garlic slices and wash the small vegetables.
- Mix two eggs well.
- 5. Use boiling water to slightly soften the dried powder. (Cannot be scalded, pinch the noodles with your hand to feel a slight hardness in the middle.)
- After pouring oil into the pot and heating it up, fry the eggs and stir them into chunks before serving.
- 7. Leave some oil in the pot and stir fry the shredded carrots, then stir fry the mushrooms together until fragrant.
- 8. Pour a little more oil into the pot, stir fry the garlic slices until fragrant, then add the bok choy and stir fry until soft before serving.
- 9. Drain the noodles and stir fry them.
- 10. Add half a tablespoon of salt, half a tablespoon of sugar, and 1 tablespoon of cooking wine. Use a shovel in your left hand and chopsticks in your right hand, stir fry quickly over high heat until evenly mixed.
- 11. Finally, put the stir fried vegetables together and add a little chicken essence to stir fry evenly.
- 12. This is the stir fried vermicelli from Fu's hometown of Wenzhou. When making it, you can also add some shredded meat to it. It's just that the time wasn't urgent in the morning, so we didn't add shredded meat, but it still tastes delicious.
