The famous roast pig's hoof in Germany is crisp outside and tender inside. With vegetables and pickled Chinese cabbage, one pig's hoof can make two people eat more. I had it in Cologne, Germany in April, and after returning home, I always wanted to try it myself. Pig trotters are not expensive, but the seasonings are a bit expensive. However, buying them can cook various Western dishes.

Steps to make German roasted pork elbow
- 1. Prepare all the seasonings, the one that looks like a plant is basil leaves, and the small jar of seasonings is rosemary. Generally, dry spices can be purchased in high-end supermarkets
- 2. Cut all the seasonings into small pieces, then spread them on top of the pig trotters, tightly wrap them with plastic wrap, and store them in the refrigerator. I usually marinate for 24-48 hours, but I marinated myself for 48 hours
- After marinating, remove all marinating seasonings. Then I steamed the pork elbow in a regular steamer for about 50 minutes. If using a pressure cooker, it will take about 25 minutes.
- 4. Take out the steamed pork elbow and do not discard the remaining meat juice during steaming. We can use it to adjust the sauce and cook vegetables
- 5. Preheat the oven to 220 degrees, lay tin foil on the baking tray, place pork elbow on it, and bake for about 40 minutes.
- 6. Cut the potatoes and carrots into strips, use the leftover meat juice from steaming pork elbow, and cook the potatoes and carrots until cooked. After cooking, mix the remaining broth into sweet and sour sauce.
- 7. Take out the roasted pig's elbow and put it on a plate. I added some German pickled Chinese cabbage here.
- 8. Finally, there is a German roasted pork elbow that I found authentic in Cologne, Germany. Actually, the taste is quite similar
