Steps to make Rou Sao Zi Noodles
- 1. Noodles should be fresh, and pork foam should be three parts fat and seven parts lean.
- 2. First make garlic water, crush the garlic and add cold water.
- 3. Stir fry sauce. Add pork foam to a hot pot and stir fry until the color changes. Then add ginger foam.
- 4. Add light soy sauce, dark soy sauce, sweet bean sauce, rock sugar, and cooking wine in sequence and stir fry well, keeping the heat low and medium.
- 5. Turn off the heat when the oil in the pot becomes clear and the meat shrinks and dries, and the color turns red and bright.
- 6. Prepare seasoning sauce. Mix soy sauce, sesame oil, chili oil, pepper powder, garlic water, chicken essence, white sugar, vinegar, and sesame paste in a small bowl and stir evenly. Add the seasoning ratio according to your taste, but do not add too much sesame paste. The purpose of sesame paste is only to make the seasoning hang better on the noodles.
- 7. After cooking the noodles, rinse them with cold water.
- 8. Shake the noodles dry, put them in a large bowl, pour in the seasoning sauce, add the stir fried sauce, sprinkle with scallions, and mix well.
