Steps to make Bridge tofu
- 1. Prepare the ingredients. Cut (pat) ginger, scallions, garlic, and pickled vegetables into small pieces, chop and diced peppers.
- 2. Soak (blanch) the tofu chunks in salt water for a while, so that they are not easily scattered or hardened during cooking, and have a smoother, more tender and delicious taste.
- 3. Add scallions, ginger, garlic, light soy sauce, dark soy sauce, cooking wine, oil, salt, chicken essence, oyster sauce, sugar, starch, and chili sauce to the meat filling, stir well.
- 4. Spread on a slightly deeper plate and marinate for 20 minutes.
- 5. Sprinkle pickled vegetables on the meat filling.
- 6. Cut the tofu into slices and place them on top of pickled vegetables. Crack an egg into each side of the tofu.
