As someone who grew up eating rice noodles, I have always loved to eat sour soup flavored rice noodles. Sour soup is usually made with pickled vegetables and minced pork. Steps to make Minced meat and cowpea red rice noodles

  • 1. Bring half a pot of water to a boil, then add the rice noodles and cook for ten minutes. When starting to cook, stir with chopsticks to prevent the rice noodles from sticking together.
  • The cooked rice noodles are soft and smooth like this. Check if the soup in the pot is thick. If the rice noodles are cooked directly like this, it won't produce delicious rice noodles.
  • 3. Soak the cooked rice noodles in cold rice for two minutes to make them soft, refreshing, and smooth, then take them out and let them dry for later use.
  • 4. Prepare some lean and fat minced meat, which can be chopped by yourself or purchased from supermarkets.
  • 5. Cut the long sour cowpeas into small particles, and also cut the scallions, ginger, and garlic for later use.
  • 6. Heat up a wok and pour a little oil to moisten the wok. This way, the meat will not stick to the wok when stir frying. Add minced meat and stir fry until the oil is released. Add a little cooking wine and stir fry until the fishy smell is removed. After the minced meat is fried until the oil is released, add scallions, ginger, and garlic to stir fry until the aroma is released.
  • 7. Add a spoonful of Douban Sauce and stir fry until red oil is produced. Other sauces can also be used without Douban Sauce.
  • 8. Pour in a bowl of water and bring to a boil, then add two spoons of light soy sauce. The amount of soy sauce should be added according to personal preference.
  • 9. Put in the sour cowpeas and cook for two minutes, then bring out the sour taste of the sour cowpeas.
  • After the beans are cooked to a sour taste, add an appropriate amount of salt and a little chicken essence to season, and our sour soup is cooked.
  • 11. Put the rice noodles into a large bowl, pour over the cooked sour soup, sprinkle with some scallions or cilantro, and you're ready to eat. When eating, you can add some spicy oil according to your personal taste.
