Steps to make Nourishing Beauty, Brain, Qi and Blood, and Delicious~Walnut Red Date Double Ninth Cake

  • 1. Prepare the raw materials for red dates and walnuts filling. Red date filling: 50g walnut kernels, 80g red dates, 10g goji berries, 60g maltose, appropriate amount of water.
  • 2. Put the walnut kernels into a baking tray and send them to the oven. The oven temperature is about 150 degrees Celsius for about 10 minutes, and bake until the flavor is released.
  • 3. Remove the pit from the red dates and put them into a blender. Add an appropriate amount of water and the more you add, the longer you will fry. Therefore, as long as the blender is able to stir, the red dates can be ground into jujube paste.
  • 4. Pour the beaten jujube paste into a non stick pot, stir fry the maltose and goji berries together until they are thick, and then mix the walnuts together.
  • 5. Rice cake flour: 65g glutinous rice flour dipped with 85g Rice noodles, 10g corn oil, 70g water, 25g sugar flour
  • 6. Put the glutinous rice flour, sticky Rice noodles and sugar powder together, add water and corn oil, rub the caked flour evenly by hand, cover it with plastic wrap, and let it stand for 20 minutes. Use a sieve to sieve the mixed flour with a spoon.
  • 7. Prepare one mold (I used a 6-inch bottom mold), and lay silicone oil paper inside the mold for demolding. A layer of corn oil can be brushed around the mold.
  • 8. Spread half of the sieved rice flour into the mold, do not press it tightly, just gently flatten it, put it into a steamer, steam for 5 minutes after the water boils, and take it out. Spread the walnut and jujube puree in the middle.
  • 9. Spread the remaining half of Rice noodles on the walnut and jujube paste, and decorate with red dates and cranberries; Continue to steam in the steamer for 25 minutes, turn off the heat, and simmer for 3-5 minutes before removing.
  • 10. Demould and install into the tray.
  • 11. Soft, sweet, healthy, nutritious, and delicious.
