  • 1. Soak soybeans overnight in advance.
  • 2. Blanch the pig trotters and skim off the foam.
  • 3. Drain.
  • 4. Use a clip to remove pig hair.
  • 5. Put the pig trotters into a pot with clean water, add seasoning wine, scallions, and ginger, and bring to a boil.
  • 6. Add soybeans and bring to a boil over high heat.
  • 7. Transfer to a clay pot and simmer for about 2 hours until the soybeans and pork trotters are soft and tender. Add salt and simmer for another 20 minutes. Before removing from the pot, add an appropriate amount of goji berries and sprinkle with chopped scallions.
