Fuding meat slices are a traditional delicacy in Fuding Town, Fujian. He didn't actually put meat slices directly into the pot. It's beating lean meat into minced meat. Steps to make Fuding Pork Slices

  • 1. Prepare a good piece of pork. I used the front meat clip to wash it clean.
  • Cut into small pieces.
  • 3. Add scallions, ginger, and garlic into the meat grinder.
  • 4. Beat it a few more times to make this kind of minced meat. Well, you must play it a few more times, it's very detailed.
  • 5. Add an appropriate amount of baking soda and water in three batches. Mix it together.
  • 6. Add a little salt and chicken essence to mix.
  • 7. Add sweet potato powder. Add water again and stir until thick.
  • 8. Add an appropriate amount of light soy sauce to enhance the flavor. Add some white sugar.
  • 9. Stir until it looks like this.
  • 10. Put water in the pot and add seaweed, star anise, and fragrant leaves. Boil the water.
  • 11. They use specialized tools for cutting meat slices, but I don't have them. I just shape them with my hands. Pinch this meat filling into the shape you like and put it into the pot.
  • 12. Boil over medium heat.
  • 13. Put it into a two pound pot, add salt and chicken essence. Vinegar and shredded ginger.
  • 14. According to each individual's taste, add some leafy vegetables and scallions that you like. Turn off the heat and let it sit for five minutes.
