Braised beef in red wine is the most frequently served French dish in the movie "Julie and Julia", and I believe many people learned about this dish because of this movie. Many people find it difficult to cook beef stewed in red wine, but it is actually a very easy and homely French dish. Especially when guests come to the house, prepare it in advance and put it in the oven. You don't need to worry about the remaining 3-4 hours. It slowly simmers in the oven until the whole room is filled with the aroma of beef and red wine. - 1. Use a kitchen tissue to remove excess moisture from the beef and cut it into large pieces. (Julia once said that when making red wine stewed beef, it is best to use shoulder blade meat because it is more elastic and suitable for long-term stewing.)
- 2. Pour a tablespoon of olive oil onto the pot and quickly stir fry the beef. After all sides of the beef are cooked brown, pour them out of the pot,
- 3. Put the excellent beef into a clay pot.
- 4. Pour the red wine into the pot where the beef was stir fried just now, and blend the remaining beef powder, beef juice, and red wine together in the pot
- 5. Pour it into the clay pot again. Julia child suggests using thin wine, Rh ô ne Valley wine, or Burgundy wine. Personally, I think Cabernet Sauvignon, Pinot Noir, Merlot, and other typical dry reds are all good. Then pour in 500ml of beef soup.
- 6. Put chopped onions, carrots, tomato paste, thyme, bay leaves, garlic, a little salt, and pepper into an oven preheated to 160 degrees Celsius and simmer for 3-4 hours. Finally, pour in the mushrooms and simmer together for 20 minutes.
- 7. Mix 30g of butter and 30g of flour well
