Steps to make CoCoLc's Private Recipe Classic - Vanilla Ice Cream
- 1. Egg yolk, sugar, vanilla pods, milk (small measuring cup), fresh cream (large measuring cup).
- 2. Pour sugar onto the top of the egg yolk.
- 3. Use a mixer to mix step (2) evenly and set aside.
- 4. Pour milk and vanilla pods into the spare boiling pot. (Use a fruit knife to cut open the vanilla pods from the center, then open the petals of the vanilla pods. Use the tip of the back of the knife to scrape the seeds from one end to the other position.)
- 5. Cook over medium heat until it boils, then turn off the heat.
- After step (5), pour in the spare step (3). (At this point, the mixer needs to pour in the cooked milk vanilla pods while stirring.)
- After step (6), pour it into the boiling pot.
- 8. Cook slowly over low heat until slightly thickened, then turn off the heat. (At this time, it is necessary to continuously stir to avoid burning the pot, and also be slightly careful not to separate the egg and milk.)
- After step (8), pour it into a spare container and let it drip with a silicone spatula. If the bottom of the spatula gets wet, scrape it into the container for later use.
- 10. In addition, add water and ice to a spare large container, place step (9) on top, and use a silicone spatula to continuously stir until cooled.
- Step (10) After cooling, slowly pour in the spare fresh cream while stirring to set it aside.
- 12. Take out the ice cream maker from the freezer and slowly pour step (11) into the ice cream maker. (The ice cream machine should be placed in the freezer 24 hours in advance and chilled below minus 18 degrees Celsius. If the time is too short and the cooling temperature is not enough, it will appear liquid when stirred above minus 18 degrees Celsius.)
- During stirring, gradually form a thick and soft state.
- After stirring, transfer it to a frozen container and then freeze it in a freezer for a few hours. (There are too many ingredients, which makes it difficult to stir in 15 minutes, so it has to be transferred and placed in a frozen container, and then frozen in the freezer for a few hours. (Ice cream machines usually take more than 20 minutes to complete.)
- After step (14), place it in a frozen ice cream plate and sprinkle with almond kernels to serve. (For "Roasting Peach Kernel Slices", please refer to the relevant recipe and log: "CoCoLc's Private Recipe - Roasted Almond Kernel Slices" is sufficient.)
- 16. Finished product drawings.
