Steps to make Crispy rice dumpling

  • 1. Prepare the ingredients. The Cong you bing is salty, so I paired it with rice dumpling with crab roe and egg yolk quicksand.
  • 2. Take out rice dumpling in advance to defrost for 3 or 5 minutes, without complete defrosting.
  • 3. Cong you bing can also be defrosted for 3-5 minutes.
  • 4. After slightly thawing the Cong you bing, cross cut the Cong you bing into 4 small pieces.
  • 5. Put on gloves once, take a rice dumpling and put it on a Cong you bing.
  • 6. Wrap rice dumpling with Cong you bing, pinch the mouth tightly downward, and then arrange it into a smooth ball.
  • 7. After wrapping everything, put it into the frying basket of the air fryer.
  • 8. Separate the eggs and only take the yolk portion.
  • 9. Use a small brush to dip an appropriate amount of egg yolk liquid on rice dumpling.
  • 10. Sprinkle white sesame and black sesame separately; I use black and white sesame seeds to distinguish two kinds of rice dumpling with different fillings.
  • 11. Put the frying basket into the air fryer, adjust the temperature to 180 degrees, and adjust the time to about 15 minutes.
  • 12. Pay attention to observation in the last 2 minutes. The surface should be golden, and there is one exposed.
  • 13. The surface is golden and crispy.
  • 14. The rice dumpling is soft and glutinous.
