Steps to make Pickled and Fresh
- 1. Cut pork belly into small pieces
- 2. Cut the chicken into small pieces
- 3. Cut the ham into small pieces
- 4. Peel and cut spring bamboo shoots into small pieces
- 5. Blanch the spring bamboo shoots first
- 6. Blanch the pork belly, chicken, and ham, and add some ginger slices and scallions
- 7. After the water boils and the meat changes color, remove it and rinse it thoroughly with water
- To save time, I pressed the meat in an electric pressure cooker for 20 minutes and added an appropriate amount of water to the pressure cooker
- 9. Add some cooking wine, cover the pot, and set a time of 20 minutes
- 10. When time is up, pour all the ingredients back into the clay pot and add bamboo shoots
