Steps to make Pickled and Fresh

  • 1. Cut pork belly into small pieces
  • 2. Cut the chicken into small pieces
  • 3. Cut the ham into small pieces
  • 4. Peel and cut spring bamboo shoots into small pieces
  • 5. Blanch the spring bamboo shoots first
  • 6. Blanch the pork belly, chicken, and ham, and add some ginger slices and scallions
  • 7. After the water boils and the meat changes color, remove it and rinse it thoroughly with water
  • To save time, I pressed the meat in an electric pressure cooker for 20 minutes and added an appropriate amount of water to the pressure cooker
  • 9. Add some cooking wine, cover the pot, and set a time of 20 minutes
  • 10. When time is up, pour all the ingredients back into the clay pot and add bamboo shoots
  • 11. I also added some goji berries and stewed them together for half an hour
  • 12. Add some salt to season it
