Renqingcai is a name we use here. I checked its scientific name and found it to be amaranth. However, I noticed that amaranth is a bit reddish, so I took another photo of Renqingcai because it has already been blanched! Among the wild vegetables, my favorite is this human green vegetable. Human green vegetable is a herbal plant that can be used for both food and medicine. There are wild ones along the fields and roads, making filling very delicious. Today, I made pancakes! The pancake is full of vegetables without a lid, only the golden bottom below is delicious, fragrant and crispy!

Steps to make Renqing Vegetable Paste Cake

  • 1. Wash the vegetables thoroughly and blanch them with boiling water. Flush with cold water to cool down
  • 2. Dried and chopped human vegetables
  • 3. Put it into a basin
  • 4. Put cooking oil into the pot and stir fry shrimp skin over low heat until fragrant
  • 5. Add chopped scallions to the vegetables, stir fry the shrimp skin until it turns slightly yellow and fragrant, then add it to the vegetables
  • 6. Add light soy sauce, salt, and sesame oil
  • 7. Stir evenly
  • 8. Corn flour, half boiled in hot water
  • 9. Use warm water for the other half (mix the other half with baking powder and mix well), then mix the two together and mix well
  • 10. Softness and hardness as shown in the picture (not too hard, but very soft)
  • 11. Preheat the electric cake bowl in advance, place half of the spoon in the electric cake bowl as shown in the picture, and then press it flat with your hand, as shown in the picture
