Steps to make Spicy and Drunken Cucumber

  • 1. Wash fresh cucumbers thoroughly; Cut the cucumber into 2 to 3 sections according to its size, then cut it open from the middle and into small strips. This is the simplest and most common cutting method; (I'll play a trick, the layout is beautiful, there's no need to follow it)
  • 2. Put the cucumber slices into a large bowl, add 1 tablespoon of salt, shake well, and marinate for 4-5 hours;
  • 3. Squeeze dry slightly and use a tissue or disinfectant tea towel to gently absorb moisture;
  • 4. Prepare sauce when marinating cucumbers: Wash and wipe dry red chili peppers, cut them into small pieces; Clean the Sichuan peppercorns thoroughly and set aside for later use;
  • 5. Soy sauce, white sugar and Baijiu for standby;
  • 6. Heat up the wok and add some cold oil (3 to 4 tablespoons of oil). The young man slowly stir fry the chili peppers, Sichuan peppercorns, and a few slices of ginger until the red chili peppers turn a deep jujube red color;
  • 7. Add soy sauce and sugar, turn to high heat and bring to a boil for 2-3 minutes;
  • 8. After turning off the fire, add Baijiu immediately, the soup will boil again, and the aroma of the wine will disperse. After making the sauce, cool it to room temperature and set it aside;
  • 9. Prepare other ingredients: sliced chili peppers; Garlic slices; Ginger slices; Wash and drain the coriander roots (if you like, you can also add some carrots, lotus root slices, or even cauliflower, which need to be blanched and cooled);
  • 10. Put cucumber slices, pepper slices, garlic slices, ginger slices, and coriander roots together in a large bowl;
  • 11. Pour on the cooled sauce and marinate for 2-3 hours.
