When the children heard that I was going to make a sugar cake, they asked me to make a big white cake. They really love Big White in the Super Marine Corps. This is my first time making a sugar cake, maybe it's a bit lacking, but I still really like it. I hardly used any tools or molds to make this cake, I basically made it by hand. The only mold is the small white one on the edge interface. You can also replace that small white one with a bow or something, it's also very beautiful.

Steps to make Da Bai Fantang Cake
- 1. First, make a pound cake, which has a sturdy cake body and is more suitable for making sugar cake. Softened butter, pour into an egg beater to beat the butter, then add granulated sugar to mix the sugar and butter completely.
- 2. Add eggs in portions, whisk each egg until fully blended with butter, and then add another egg. (Remember to add small amounts multiple times to avoid separating the egg and oil. I divided the eggs in the recipe into eight parts and added them in.). Whip the butter until fluffy and add sifted low gluten flour (I forgot to take a picture of this step).
- 3. Mix the butter and flour evenly (be careful not to over mix).
- 4. Pour into a six inch circular cake mold that has been buttered, and scrape the surface slightly flat. (You can cut a round oiled paper at the bottom of the circular mold in advance, which is the same size as the mold, making it easier to demold.)
- 5. Bake in a preheated oven at 180 degrees Celsius for 40 minutes in the middle layer. After satisfactory surface coloring, cover with aluminum foil.
- 6. Tie a non stick toothpick with a bamboo stick when it comes out of the oven, and it will be fully cooked.
- 7. After cooling and demolding, cut off the cake that is raised unevenly on top,
- 8. Place the cake on a silicone pad and mark the size.
- 9. Apply a little white oil on the silicone pad. If the white oil freezes hard in the cold, you can put it on your hand and cover it for a while before it melts.
- 10. Take an appropriate amount of sugar syrup and use a toothpick to stick an appropriate amount of pink pigment into the syrup. Don't add too much pigment at once, take a small amount at a time.
- 11. Rub evenly until a satisfactory color is achieved.
- 12. Sprinkle an appropriate amount of starch on the silicone pad.
- 13. Apply an appropriate amount of white oil on your hands. Roll out the sugar paste with a rolling pin.
- 14. The diameter should be larger than the diameter of the cake plus the height on both sides.
- 15. Carefully spread the sugar on the cake,
- I don't have a smoothing knife, so I directly use my hands and a stainless steel round chopstick to assist in smoothing and fitting the surface and sides. (This process should be slower and not rushed)
- 17. Use a pizza cutter to cut off excess sugar paste from the bottom of the cake.
- 18. Pull off the excess sugar syrup.
- 19. Add some pink pigment to the excess sugar syrup. Make the edge of the cake.
- 20. Rub evenly until a satisfactory color is achieved.
- 21. Roll the sugar into long strips, flatten them, and roll them into a length that is enough to make a circle of cake.
- 22. Cut with a rolling cutter to a width of about 1.5 centimeters. Cover the remaining syrup with plastic wrap and keep it for later use.
- 23. Place the cut edge strip on your hand.
- 24. Brush a thin layer of pure water on the bottom edge of the cake with a small brush.
- 25. Wrap the edge tape tightly around the bottom edge.
- 26. Take a piece of dried pastry, knead it soft, and make it into a white body, limbs, and head. And assemble the limbs.
- 27. Take another small amount of dried Pes and add an appropriate amount of black pigment.
- 28. Knead it well.
- 29. Pinch out two small circles and flatten them to make big white eyes, and also make a small straight line. Stick them on Da Bai's face separately.
- 30. Use a toothpick to secure Big White's head and body in place.
- 31. Da Bai's body is ready.
- 32. Transform the red and black paste into abbreviations for "I LOVE YOU", flatten them, and roll them out.
- 33. Take some white dried paste and place it into a large white mold. If there is no mold, you can also make a bow or other shapes directly, which are also very beautiful.
- 34. Press it down with your hand and remove it.
- 35. Stick clean water on the junction of the edge strip. Referring to the main image, dip the body of Da Bai and the word "I LOVE YOU" onto the cake with clean water. (Due to the Meitian system, I have uploaded this process image countless times, but I couldn't upload it, so everyone had to brainstorm and make up for it.) The Da Bai sugar cake is now complete~
