Steps to make Mantou made from fermented whole wheat

  • 1. Clean the Artemisia scoparia leaves.
  • 2. Wash thoroughly.
  • 3. Boil water in a pot and add blanching water of Artemisia scoparia.
  • 4. Bring the pot to a boil.
  • 5. Remove and drain the water.
  • 6. Cut into pieces.
  • 7. Put warm water in a large container.
  • 8. Add Artemisia scoparia and yeast, stir evenly.
  • 9. Add flour and stir until fluffy.
  • 10. Knead the dough and let it ferment in a warm place until it doubles in size.
  • 11. Add dry flour and take out the dough that has been baked.
  • 12. Rub and exhaust, knead into Mantou, and put it in a warm place for secondary fermentation.
  • 13. Put the prepared Mantou into the steamer, boil it over high fire, steam it over medium heat for 20 minutes, and turn off the heat and simmer for 5 minutes.
