Steps to make Mantou made from fermented whole wheat
- 1. Clean the Artemisia scoparia leaves.
- 2. Wash thoroughly.
- 3. Boil water in a pot and add blanching water of Artemisia scoparia.
- 4. Bring the pot to a boil.
- 5. Remove and drain the water.
- 6. Cut into pieces.
- 7. Put warm water in a large container.
- 8. Add Artemisia scoparia and yeast, stir evenly.
- 9. Add flour and stir until fluffy.
- 10. Knead the dough and let it ferment in a warm place until it doubles in size.
- 11. Add dry flour and take out the dough that has been baked.
- 12. Rub and exhaust, knead into Mantou, and put it in a warm place for secondary fermentation.
- 13. Put the prepared Mantou into the steamer, boil it over high fire, steam it over medium heat for 20 minutes, and turn off the heat and simmer for 5 minutes.
