We only used egg yolks to make grape milk pastries, so we made this one with leftover egg whites. The cookies made with egg whites alone feel even more crispy, and with cheese added, they have a truly creamy flavor~

Steps to make Cheese protein cookies (oven made cookies)
- 1. Prepare materials
- 2. Soften butter and cream cheese at room temperature until they can be poked with your fingers. First, use an electric mixer to stir the butter and cheese at low speed
- 3. Add granulated sugar, powdered sugar, and salt, stir slightly with a scraper first, and then beat with an egg beater, otherwise the powder will fly up
- 4. Use an electric egg beater to beat until the color turns white and the volume expands
- 5. Add the protein in batches, each time waiting for complete mixing before adding the next batch, stirring evenly
- 6. Sift in low gluten flour and corn starch, and use a rubber scraper to cut and mix evenly (do not mix too much, just mix until there is no dry powder)
- 7. The well mixed batter is moist and sticky
- 8. Put the batter into a piping bag and squeeze it onto a baking tray (if the baking tray is a regular one, it is recommended to cover it with a layer of oiled paper)
- 9. Preheat the oven at 180 degrees Celsius for 10 minutes before baking: in the up and down heat mode, bake at 190 degrees Celsius for 25 minutes (remember to keep an eye on the last few minutes as cookies can easily burn)
- 10. The super crispy cookies are ready to be baked (they will become crispy when they cool slightly, but if they are still a bit soft, they can be reheated a little longer)
