Steps to make Bridgehead pork ribs

  • 1. Chop the pork ribs into small pieces two fingers wide for easy seasoning and frying.
  • Soak in clean water for half an hour to remove the blood inside.
  • 3. Cut scallions and ginger into shreds, add two tablespoons of water, squeeze out the scallion and ginger juice, and chop some minced garlic for later use.
  • 4. Squeeze the pork ribs dry, add salt, soy sauce, oyster sauce, white sugar, thirteen spice, pepper, baking soda, and stir well.
  • 5. Add minced garlic, scallion ginger water, cooking wine, stir well, and marinate for 1 hour.
  • 6. Corn starch, flour ratio 2:1, add eggs, stir well with water.
  • 7. Mix it into a paste, and the chopsticks can fall naturally when lifted, disappearing immediately.
  • 8. Mix well to make batter, add two spoons of cooking oil and stir evenly.
  • 9. Squeeze dry the marinated pork ribs and evenly coat them with batter.
  • 10. Heat oil from the pot, with an oil temperature of about 50-60%.
  • 11. Keep low to medium heat, fry the pork ribs in the pan until the surface turns golden brown and remove.
  • 12. When the oil temperature rises to about 70%, fry again in the pot for about 30 seconds.
