Hangzhou pepper and beef tenderloin is a traditional Zhejiang dish with Hangzhou pepper and beef tenderloin as the main ingredients. The characteristic is a light and slightly sweet taste. The best thing I've ever tasted was at 'Remembering Jiangnan', watching the lush greenery and eating the tender beef that doesn't require biting... As a cook for many years, I've decided to give it a try< br>

Steps to make Sauteed Beef Fillet with Hot Green Pepper
- 1. Food preparation: 1. Use a meat hammer to lightly tap both sides of the beef to make the meat soft; 2. Cut the strip shape in a reverse pattern (width, thickness about 3mm); 3. Cut the Hangzhou pepper into sections; 4. Cut scallions and ginger into coarse shreds, and slice garlic into slices.
- 2. Bacon: Add 1 tablespoon of red wine, 1 tablespoon of oil, 1/2 teaspoon of black pepper powder to beef, and mix well by hand. During the grabbing process, add a small amount of water and 1 teaspoon of starch. Finally, add a spoonful of sesame oil, mix well with chopsticks, marinate for at least 30 minutes, and set aside.
- 3. Heat up the pot and add more oil. When the oil is 70-80% hot, add the beef and fry quickly over high heat until the beef turns golden brown. Remove and set aside for later use.
- 4. If there is a little oil left in the pot, add scallions, ginger, garlic, salt, and stir fry with Hangzhou pepper until it is dead. Stir fry the beef and add a little soy sauce to season.
- 5. Finished products.
