Steps to make Dongpo Braised Pork
- 1. Blanch the pork belly in cold water for a few minutes to remove any foam.
- 2. Then scrape clean and cut into 4cm cubes.
- 3. Put ginger and scallions into a clay pot and size them up.
- 4. Then place the washed meat skin upside down into a clay pot.
- 5. Add rock sugar, star anise, cinnamon, fragrant leaves, dark soy sauce, and then pour in yellow wine and an appropriate amount of water.
- 6. Cover tightly and simmer over low heat for about 2 hours.
- 7. Then take out the skin of the meat and place it upside down in a bowl. Put it in a steamer and steam over high heat for 30 minutes.
