As southerners, I didn't actually know about spring cakes before. The first time I learned about spring cakes was when I was studying abroad in France. My little mountain told me about spring cakes and we made them together, making them almost one of the essential foods for our travels. Haha, I envy those foreign classmates. However, after returning to my hometown, spring cakes have gradually faded out of my life. Steps to make Stella's Spring Cake Diary
- 1. Mix noodles. It was said that the skin of the spring cake should be made with hot noodles, but I forgot at first and mixed it with cold water. It turned out that it was also possible:) Mix the noodles well and cut them into sections one by one
- 2. Then place the two sections together, coat them with vegetable oil in the middle, press them flat with your hands, and roll out the skin~
- 3. Roll out the skin, try to be round as much as possible, not too thin. The size is determined by the size of the flat pan at home (my one is a bit too big, haha, later improved and reduced:), so it is convenient to fry later on~
- 4. Bring it to the pot! First, heat up the pot, add some oil, and put in the rolled out pancakes (actually, this can make two pancakes at once, hehe~). This spring cake skin will be cooked quickly. When it's slightly charred, flip it over and both sides will be ready to be cooked~
- 5. Then let it cool down a bit and you can tear it open. Here are two spring cake skins~~(Please ignore me and my work clothes, hehe~)
- 6. Start preparing the dishes for the spring cake. It can be freely used, in fact, you can add whatever dishes you have at home. Here are Chinese cabbage, green pepper, mushroom, agaric, dried shreds, dried tofu, all cut into shreds, and of course, scallions~~
- 7. Put the vegetables in the pot and stir fry them. If they are not easy to cook, you can put them in first. Vegetables are actually quite cooked, with seasoning added. Personally, I think filling dishes can have a slight flavor. Then, salt, pepper, a small amount of soy sauce, and vinegar are added in sequence. Before serving, a little sugar is added (please still ignore my poor stir frying technique~~)
- 8. It's all okay. Roll the vegetables into the spring cake and you can eat it now
- 9. Anyway, my parents are very cooperative and have eaten a lot of food. They also praise the taste all the time. Hehe, there are some feelings, but the taste is really good. It's a perfect spring cake dinner:) Served with Congee~
