Steps to make Roujiamo's bread

  • 1. Mix 250g of regular flour, 110g of water, and 2g of yeast to form a rough and hard dough. Cover with a damp cloth in summer to save about 15 minutes of dough (slightly longer in cold weather). I sometimes add 1g salt and pepper to enhance the flavor.
  • 2. In addition, prepare 1.5g of edible alkali noodles and 30g of hydrated noodles for later use. Dip 30g of alkaline water into the dough with clenched fists until the water runs out and the dough becomes soft and smooth.
  • 3. Roll the dough into long strips and divide them into 6 evenly sized pieces, approximately 64.5 grams.
  • 4. Knead the dough into thick strips 10 centimeters long, and cover the dough with a damp cloth during the making process to prevent moisture loss.
