Steps to make French sesame mooncake
- 1. Mix cooked black sesame powder and sugar powder evenly
- 2. Add lard and mix well. Cover with plastic wrap and refrigerate in the refrigerator for later use
- 3. Butter softens at room temperature, add marshmallows all at once
- 4. Beat until it turns white
- 5. Add the egg mixture to the butter in multiple portions, mix well each time, and then add the next one
- 6. Stir evenly
- 7. Sift in almond powder and low flour
- 8. Cut and mix until there is no dry powder left
- 9. Put the pancake batter and black sesame filling separately into the piping bag
- 10. First, squeeze the pancake batter into the mold
- 11. After squeezing both sides, squeeze in black sesame filling in the middle
- 12. Fill the remaining pancake batter on top, flatten it with your fingers, use a fork to draw a few horizontal lines, and brush with egg yolk liquid
