Steps to make Mooncakes that can be made without an oven, can be eaten by babies at 6 months old, and give them a taste during Mid Autumn Festival!
- 1. Wash and peel sweet potatoes, purple potatoes, and yams, cut them into slices, and steam them in a pot until cooked. Purple potatoes are easy to stain. If you are worried about staining other foods purple, you can steam purple potatoes separately in a bowl/plate.
- 2. Steam 2 eggs along the way and use them to make mooncake filling later. If the cut is relatively thin, after boiling the water, it should be about 10-15 minutes. You can open it and take a look. A little softer is easier to press the mud.
- 3. Put the steamed eggs in a bowl and add some cold water to make it easier to peel.
- 4. Steamed purple potatoes, yams, and sweet potatoes are mashed separately and can be ground in a grinding bowl. If there is no grinding bowl, this magical tool can be used. The spoon can be used to press them out delicately and quickly, saving time and effort. Apart from being a bit ugly, there is no problem.
- 5. Take some yam, flatten it, and then add the boiled egg. Just use the egg yolk. Let's make a yam egg yolk mooncake first.
- 6. Then wrap the egg yolk and pinch it into a roughly circular shape, as the pattern will need to be pressed later, so it won't look as good now.
- 7. Make another purple sweet potato filled mooncake, take some sweet potatoes, beat them flat, then add some purple sweet potatoes and wrap them up.
- Yam, sweet potatoes, and purple potatoes can all be used as fillings and skins, so there are many different combinations that can be made. I will give a few examples of combinations that I think are beautiful and delicious. If the filling is relatively large, you can push it up with both hands like me. If you are a beginner, it is recommended to make the skin a bit larger to make it easier to wrap. The video looks more intuitive.
- 9. The mold can be coated with a little oil to prevent sticking, and then we can put the mooncakes that we have filled into the mold and press them down. The sweet potato is a bit sticky, be careful when taking it out.
- 10. Yam has relatively low moisture content and high viscosity, making it the easiest to shape. If you are a beginner, you can first use yam to make mooncake skin, which is the best operation. Baby mooncakes are ready and can be compared to adult mooncakes.
