Steps to make Braised eggplant
- 1. Eggplant, green chili, and garlic for later use.
- 2. Shred green and dried chili peppers, slice garlic, and chop scallions into chopped green onions.
- 3. Wash the eggplant and cut it into pieces.
- 4. Add corn starch and stir evenly.
- 5. Heat up the oil pan, add eggplant and stir fry evenly.
- 6. Stir fry eggplant until five layers are cooked, remove and set aside.
- 7. Add shredded chili peppers and garlic slices to a wok and stir fry until fragrant.
- 8. Add stir fried eggplant chunks and a small amount of water.
- 9. Add shredded green chili and an appropriate amount of salt, then remove from the pot.
- 10. Sprinkle with chopped green onions.
