There are various ways to make three cups of duck in Hakka areas, but the ingredients are similar. The main ingredients are duck meat, soy sauce, authentic Hakka Huanglao liquor, rock sugar, and water. Other dishes are added according to each family's preferences. For small family cooking, it is generally not necessary to cook the whole duck. Buying half of it can easily make a delicious dish like a big hotel. The secret is that I used homemade black glutinous rice wine and tangerine peel. After cooking, the room was filled with a fragrant aroma that made one's fingers race.

Steps to make Three cups of dried tangerine peel duck
- 1. Wash the purchased duck and drain the water.
- 2. Cut large pieces.
- 3. Peel and slice ginger, clean scallions, and wash tangerine peel.
- 4. Prepare soy sauce, black glutinous rice wine, rock sugar, and water (large bowl)
- 5. Put a small amount of oil in a hot pot, pour over duck chunks and fry over high heat, stir fry for a moment.
- 6. Keep the heat high and stir fry until the duck meat turns golden on the surface, causing a lot of oil to overflow. (15 minute stir fry)
- 7. Scrape up the leaked oil, put it in a bowl, filter it clean, and use it to stir fry vegetables on the same day.
- 8. Pour soy sauce (i.e. light soy sauce) and stir fry.
- 9. Keep the fire high and add black glutinous rice wine.
- 10. Add water. (Increasing the amount of water relatively yields the best result when simmered.)
- 11. Pour in rock sugar.
- 12. Add ginger slices and tangerine peel.
- 13. Stir fry with a spatula and bring to a boil. Cover the pot and boil it over high heat, then turn it to medium heat and simmer for about 20 minutes
- 14. When half of the sauce is left, add scallions and stir fry evenly.
- 15. Cover the pot and cook until the sauce is dry. (A little bit left is ideal)
- 16. Shovel it up and pour the remaining sauce over it.
