This noodle was learned from a Muslim friend. I originally thought that making lamb offal noodles wouldn't taste good, but after eating it at my friend's place once, it felt good. When I came back, I made it the same way and the whole family agreed to eat it.

Steps to make Sheep mixed noodles
- 1. Add 200 grams of water and 3 grams of salt to the flour to make a smooth dough, cover it with a cloth and let it sit for about 1 hour
- 2. After dispensing, continue to knead for 15 minutes, then roll it into a dough, apply oil to the surface, place it on a plate, cover it with plastic wrap, and knead for more than 1 hour. Set aside for later use
- 3. Sheep heads are processed and pre cooked. Because I couldn't handle it myself, I bought one that had been processed
- 4. Put the lamb head and processed lamb belly together in a pot, add water to cover the ingredients, and add cooking meat. Bring to a boil over high heat and simmer over low heat for 2 hours. The ingredients for cooking meat are: 3 dried chili peppers, 3 star anises, 30 Sichuan peppercorns, 3 cinnamon sections, and 1 piece of ginger
- 5. Boil one sheep lung and remove the blood vessels in the middle
- 6. Slice sheep lungs and blanch them in boiling water to remove any odors again
- 7. Take out the lamb belly and lamb head, cut them into shreds, and set them aside with the lamb lungs
- 8. Bring the lamb head soup to a boil, add chopped lamb offal, salt, pepper, and yellow wine, and cook for a few minutes. Then add a little chili oil, and after cooking, remove from heat and set aside for later use
- 9. Open the cooked dough and cook it thoroughly
- 10. Put the noodles into a bowl
- 11. Pour the cooked lamb offal soup over it and sprinkle with scallions
