Steps to make Mixed grain pancakes
- 1. Mix all the sesame leaf ingredients (200 grams of flour, 4 grams of salt, 7 grams of black sesame seeds (optional), and an appropriate amount of water) together to form a harder dough. Cover with a damp cloth and let it rest for 20 minutes. It's okay if it's not very smooth because I use a noodle mill to roll it
- 2. Put it into the noodle machine and roll it into thin and even strips by adjusting the gear, remember to sprinkle corn starch in the middle to prevent sticking.
- 3. Cut into appropriate rectangular pieces and make a transverse cut in the middle.
- 4. Fry in oil until both sides turn golden brown.
- 5. Remove and drain the oil for later use.
- 6. Put white flour, corn flour, and soybean flour into a container.
- 7. Add salt and 430 grams of water and stir evenly (the amount of water can be adjusted according to the proficiency of spreading the cake). Let it stand for 40 minutes, and stir two or three more times in the middle to dissolve any lumps that have not been stirred.
- 8. Cut scallions, cilantro, and pickled vegetables into small pieces
- 9. Preheat the pancake pan and use a brush dipped in a small amount of oil (or oil fluff) to wipe the surface of the pan
- 10. Scoop an appropriate amount of batter and spread it evenly with a bamboo dragonfly or scraper
- 11. Crack in an egg and spread it out evenly.
- 12. After the egg mixture solidifies, apply a layer of sweet sauce. Dilute the sweet sauce with cold white water beforehand for easy operation. If you like spicy food, you can apply some chili sauce.
- 13. Sprinkle with scallions, cilantro, and diced pickles.
