Steps to make Phoenix eyed pig liver

  • 1. Soak fresh pork liver in clean water for half an hour to remove any blood, then wash it thoroughly. Use a small knife to cut open the thicker end of the pork liver and gently scratch towards the deeper part. Remember not to cut it off.

  • 6. Immediately put the blanched pig liver in cold water, rinse it thoroughly, and drain the water for later use.
  • 7. Prepare auxiliary materials such as ginger slices, cinnamon, fragrant leaves, Sichuan peppercorns, and star anise and put them into the seasoning box.
  • 8. Start a new pot and add an appropriate amount of water. Put in pork liver, seasoning box, and then add seasoning such as fresh soy sauce, oyster sauce, sugar, and salt. Bring to a boil over high heat.
  • 9. When the pork liver is about 70% cooked, turn to medium low heat and cook for 10 minutes until the liver is completely cooked without being stiff, then it can be taken out of the pot.
  • 10. Take out the cooked pork liver and let it air dry until it's not too hot. Remove the toothpick.
