Steps to make Donkey Burger

  • 1. Divide the flour in half, use warm water to soften the dough, and let it ferment naturally
  • 2. Half of it should be soaked in oil and flour
  • 3. Donkey meat soaked in cold water produces blood
  • 4. Fry fennel and Sichuan peppercorns in a wok over low heat until cooked
  • 5. Roll it into pieces
  • 6. Beat the eggs
  • 7. Grind donkey meat into small pieces
  • 8. Add oil, salt, half a whole egg mixture, soy sauce, scallions and ginger, cooking wine, fennel and Sichuan peppercorns, and stir well
  • 9. Add baking soda to the fermented dough and knead it evenly. It is recommended to cut it evenly without sticking, and let it sit for 10 minutes
  • 10. Roll the water surface ball into a cake and wrap it with oil dough
  • 11. Squeeze with a rolling pin
  • 12. Roll it out evenly
  • 13. Fold both sides in half, roll them out evenly, and repeat twice
  • 14. Roll it out evenly and roll it into a roll again
  • 15. Cut into cubes
  • 16. Take a dumpling and roll it into a cake, then wrap it with donkey meat filling
  • 17. Pack all the ingredients, flatten them, place them in a baking tray, preheat the oven to 170 degrees, brush the surface with egg mixture, sprinkle some coconut milk, and bake for 20 minutes
