Madeline cake, also known as "shell cake". In 1730, the gourmet Polish king Reguchensky went into exile in Commerce. One day, his personal chef disappeared while about to serve dessert. In desperation, a maid temporarily baked her best little pastry, which was very popular with Reguchensky. So she named the little Dim sum after the maid madeleines, which is the real name of the shell cake.

Steps to make Vanilla Cranberry Madeline
- 1. I am using non stick Madeline molds from Fabaike
- 2. First, sieve the low gluten flour and lead-free foam powder for later use
- 3. Add eggs, vanilla sugar, and granulated sugar into the cooking bowl
- If you don't have vanilla sugar, just use a 1/4 vanilla clip to scrape off the vanilla seeds and mix them evenly. There's no need to beat them
- 5. Add the sifted low gluten flour and baking powder to the egg mixture and mix well with a whisk by hand. Do not draw circles to prevent divination
- 6. Add salad oil
- 7. Add salad oil to the batter and mix well
- 8. Pour the batter into a piping bag and refrigerate for one hour
- 9. Squeeze in batter
- 10. On the squeezed cake batter, add a small amount of dried cranberry. I didn't put half of the dried cranberry because my youngest baby doesn't like it, so I have half and half (dried fruit can be customized according to personal preference)
- 11. Put it into the pre prepared oven, heat it up to 185 degrees and down to 170 degrees, and bake for 15 minutes.
- 12. Wait until there is a high bump on the belly and the edge turns slightly yellow, then you can take it out of the oven
